Menu for 1/19/04 Through 1/25/04

This is my weekly menu.



These recipes come from Dana Carpender's 500 Low Carb Recipes. Many are induction safe or can be made induction safe through eliminating the onions or the carrots.

Monday

breakfast

2 scrambled eggs
4 oz. turkey sausage

lunch

sweet n nutty tuna
1 1/2 c. romaine
2 tbsp bleu cheese dressing

dinner

basil chicken stir fry
sesame asparagus salad

total net carbs: 15.8

Tuesday

breakfast

rodeo eggs

lunch

bleu burgers
coleslaw for company

dinner

skillet stroganoff
creamed spinach
1 1/2 c. romaine
2 tbsp bleu cheese dressing

Total net carbs: 16.6

Wednesday

confetti fritatta

picnic chicken
unpotato salad

dinner

sag paneer
quick curried lamb
ginger stir fry broccoli

Thursday

2 Atkins mini banana nut muffins

Friday

Total net carbs: 21.4

We do more on weekends and so I planned the meals to have a slightly higher carb count for those days.
